With AFIS Pastrycook’s Passionfruit Paste 52.797 it’s easy to add the delicious fragrance, colour and tart, tropical flavour of passionfruit to this classic, creamy dessert, regardless of whether passionfruit are in season or not.
Cheesecake base ingredients
- 150 gm packet plain sweet un-iced biscuits such as Butternut Snap Cookies, Milk Arrowroot biscuits or digestives
- 100 gm butter, melted
Cheesecake filling ingredients
- 2 tbsp hot water
- 1 tbsp gelatine powder
- 2 x 250g packets softened cream cheese
- 1 cup thickened cream
- 3/4 cup caster sugar
- 100g AFIS 52.797 Passionfruit Paste
Step 1
Line a 26cm round tart tin or 6 individual pie tins with non-stick baking paper.
Step 2
Crush biscuits in a food processor, add the butter and process until well combined.
Step 3
Press the biscuit mixture firmly over the base of the pan with a spoon and place in the fridge to chill.
Step 4
Place the water in a microwave-proof bowl, sprinkle with the gelatine and let stand for one minute.
Step 5
Place the bowl in the microwave and cook uncovered on high for 15 second and then stir.
Step 6
Use an electric beater to beat the cream cheese, cream and sugar in a bowl until smooth.
Step 7
Add the passionfruit paste and the gelatine mixture and beat to combine.
Step 8
Spread over the cheesecake base and chill in the fridge for at least 3 hours or overnight.
