This gingerbread man recipe makes a crisp style of gingerbread biscuit, ideal for serving with our Christmas Gingerbread Ice Cream.
Ingredients
- 125g softened butter
- 1/3 cup brown sugar
- 1 large egg
- 1/4 cup golden syrup
- 2 tsp AFIS 70.830 Vanilla Flavour
- 2 and 1/4 cups SR flour
- 1 tbsp ground ginger
Step 1
Preheat the oven to 180°C fan-forced and line three baking trays with baking paper.
Step 2
Using a mixer, cream butter and sugar until pale and light.
Step 3
Add egg and AFIS 70.830 Vanilla Flavour and whisk to combine.
Step 4
Mix in golden syrup.
Step 5
Gradually add the ginger and the flour until it is all combined.
Step 6
Lightly dust dough with flour and roll out until 5mm thick using a rolling pin, before cutting into shapes using Christmas cookie cutters.
Step 7
Bake for 12-15 mins or until golden brown and let cool on the trays.
Step 8
Once cooled, decorate as desired and store in an airtight container.
