Glycerol Monostearate is an off white, odourless waxy powder.
Function / Dosage:
Glycerol Monostearate is one of the most widely used emulsifiers, particularly for ice cream, margarine and spreads. It can be used in ice cream to attain a higher overrun, improved heat shock resistance, smoother texture and stable foam structure. It can also facilitate fine and stable water dispersion in margarine and spreads.
