Caramel N is an electronegative caramel produced by the treatment of food grade carbohydrates with heat in the presence of food grade catalysts. Caramel N is a dark brown coloured liquid.

Function / Dosage:

Caramel N is a dark brown liquid. When diluted it should be clear dark brown with a mild odour and taste typical of burnt sugar. It is used to colour a wide variety of foods notably sauces and beverages, recommended dosage in beverages is 0.05- 0.1% (w/v) and sauces 0.25-1.5% (w/v). Colour intensity 0.105-0.120 abs/cm (0.1% at 610nm).

Caramel N is manufactured from hydrolysed glucose syrup (maize derived). Recommended labelling is Caramel (IV) or Colour 150d however please check local food labelling requirements to ensure compliance. CONTAINS: Sulphite.

Shelf Life:

Store in a clean, dry, well-ventilated warehouse at ambient temperature, away from odorous materials. Storage at temperatures greater than 35ºC may lead to a decreased shelf-life. For stock control purposes, a shelf-life of 15 months from the date of manufacture is specified. Colour and viscosity increase on prolonged storage.

Regulations:

This product shall at the time of delivery conform in every respect to the provisions of the Australia/NZ food standards and regulations Manufactured there-under. Caramel Colour meets the requirements set forth in the colour additive regulations defined in the Food Chemicals Codex, Edition V; and all other international specifications. This product does not require labelling as a genetically modified food in accordance with Food Standard 1.5.2 - Foods produced using gene technology (FSANZ).
