Caramel Blackjack is an electropositive liquid caramel produced by the heat treatment of glucose syrup made from maize, in the presence of food grade catalysts.
Function / Dosage:
Caramel Blackjack is a dark brown liquid. When diluted it should be clear with an odour and taste typical of burnt sugar. It is used to colour a wide variety of foods notably sauces and baked goods. Recommended dosage in baked goods is 0.5 to 3.0% (w/w), Beer 0.1%(w/v), Meat pies and canned meats 0.3 to 2.0% (w/v).

Caramel Blackjack is manufactured from hydrolysed maize starch. Recommended labelling is CARAMEL (III) or Colour 150C. CONTAINS: Sulphite.

Shelf Life:
Store in a clean, dry, well-ventilated warehouse at ambient temperature, away from odorous materials. Storage at temperatures greater than 35ºC may lead to a decreased shelf-life. For stock control purposes, a shelf-life of 15 months from the date of manufacture is specified. Colour and viscosity increase on prolonged storage.
Regulations:
This product shall at the time of delivery conform in every respect to the provisions of the Australia/NZ food standards and regulations Manufactured there-under. Caramel Colour meets the requirements set forth in the colour additive regulations defined in Title 21, U. S. Code of Federal Regulations, Part 73.85; The Food Chemicals Codex, Edition V; and other international specifications. This product does not require labelling as a genetically modified food in accordance with Food Standard1.5.2 - Foods produced using gene technology (FSANZ).
