With AFIS 70.1037N Yuzu Flavour it’s easy to add the exciting and intriguing taste of Japanese citrus to a versatile curd that can be used to fill tarts, donuts or even cronuts.
Yuzu curd can also be enjoyed as an accompaniment to meringues, cheesecakes, pavlovas, panna cotta… or simply enjoyed on a slice of fresh bread or toast!
Ingredients
- 1/8 tsp AFIS Yuzu Flavour
- 200g butter, cubed
- 240g castor sugar
- 6 egg yolks
- 200g water
- 1/8 tsp Citric Acid powder
Step 1
Place the AFIS Yuzu Flavour, water, citric acid, cubed butter and sugar in a heatproof glass bowl or the top half of a double boiler saucepan.
Step 2
Sit the bowl or saucepan on top of a saucepan half filled with simmering water, making sure the water does not touch the glass bowl or the top half of the double boiler.
Step 3
Add the egg yolks to the bowl or saucepan and continue to stir over a gentle heat for approximately 10 minutes, or until the curd has thickened and coats the back of a spoon.
Step 4
Let cool and then refrigerate.
