Description:
Xanthan gum is a cream coloured, free-flowing powder. Xanthan gum is fermented from glucose which can be derived from corn, soy or wheat. The glucose comes from the starch of the plant and does not contain allergenic protein.
Function / Dosage:
A fine white to off white powder with a mild odour which forms a gel when mixed with water. It acts as a thickener, binder, stabiliser, protective colloid, suspending agent and rheology control agent. It dissolves rapidly in cold or warm water and suitable for use in many food systems. Recommended dosage 0.2% to 0.6% as consumed in the final product, depending on application.

Shelf Life:
Store in a clean, dry, well-ventilated warehouse at ambient temperature, away from odorous materials. Storage at temperatures greater than 35ºC may lead to a decreased shelf-life. For stock control purposes, a shelf-life of 12 months is specified.
Regulations:
This product is manufactured from colours conforming to FAO/WHO JECFA specifications. It shall at the time of delivery conform in every respect to the provisions of the Australia/NZ food standards and regulations made thereunder. AFIS does not use genetically modified organisms for the manufacture of their products and to the best of our knowledge the above product is manufactured from raw materials that have not been genetically modified. This product does not require labelling as a genetically modified food in accordance with FSANZ 1.5.2.
